HOW TO FIGHT COVID AT HOME

No one ever talks about how to fight Covid at home. I came down with Covid in November. I went to the hospital, running a fever of 103, a rapid heart beat, and other common symptoms that come with Covid. While I was there they treated me for the high fever, dehydration and pneumonia. 

The doctor sent me home to fight Covid with two prescriptions -  Azithromycin 250mg & Dexamethason 6mg. When the nurse came in to discharge me, I asked her, "What can I do to help fight this at home?" She said, “Sleep on your stomach at all times with Covid. If you can’t sleep on your stomach because of heath issues sleep on your side. Do not lay on your back no matter what because it smashes your lungs and that will allow fluid to set in.

Set your clock every two hours while sleeping on your stomach, then get out of bed and walk for 15-30 min, no matter how tired or weak that you are. Also move your arms around frequently, it helps to open your lungs. Breathe in thru your nose, and out thru your mouth. This will help build up your lungs, plus help get rid of the Pneumonia or other fluid you may have.

When sitting in a recliner, sit up straight - do not lay back in the recliner, again this will smash your lungs. While watching TV - get up and walk during every commercial.

Eat at least 1 - 2 eggs a day, plus bananas, avocado and asparagus.These are good for Potassium. Drink Pedialyte, Gatorade Zero, Powerade Zero & Water with Electrolytes to prevent you from becoming dehydrated. Do not drink anything cold -  have it at room temperature or  warm it up. Water with lemon, and little honey, peppermint tea, apple cider are good suggestions for getting in fluids. No milk products, or pork. Vitamin’s D3, C, B, Zinc, Probiotic One-Day are good ideas. Tylenol for fever. Mucinex, or Mucinex DM for drainage, plus helps the cough. Pepcid helps for cramps in your legs. One baby aspirin everyday can help prevent getting a blood clot, which can occur from low activity. "

Drink a smoothie of blueberries, strawberries, bananas, honey, tea and a spoon or two of peanut butter. 

We always hear of how Covid takes lives, but there isn't a lot of information out there regarding how to fight Covid. I hope this helps you or someone you know, just as it has helped me.

Christmas Light Fruit Cake

I finally found the red candied cherry after searching a few stores! This is my first time trying this cake and not sure if I will like it or not so only make a small one. I think the reason why I want to try is because it's such a pretty cake with all the red, green, orange color making it so festive for the holidays. However, after excitingly baking and trying...I might have to eat everyday this a week to see if I really like it or not. Maybe tastes better as day passes or I'll learn to like it more?...๐Ÿ˜… So far none of my family want a second bite! ๐Ÿ˜‚ I will try a cream cheese version which have no alcohol so kids might like it better I hope...since I have a lot of fruit candied left.๐Ÿ˜ฌ

Edit: Eating cake the next day. It smells so good. Taste very good too. Cake with a hot cup of coffee! I think I'll make this cake just for me every year. ๐Ÿ˜†


I followed ➡️Apron recipes. Just changed the fruits a bit since I didn't have apricot.  I used red green cherries, pineapple,  orange peels, raisins, golden raisins, and dates.

*** Please note original batter a little dry so I used 113g butter and 2 xlarge eggs instead. I think a little bit more butter or milk to have a moist cake. My ingredients. 

  • Raisin & golden  40-50g 
  • Candied pineapple or apricot 40-50g
  • Red & green cherries 50g 
  •  Orange peel 20-25 g
  • Rum 100ml
  • Soak dried fruits overnight in fridge. 
  •  
  • Unsalted butter 113g / 8Tbsp room temp
  • Sugar 70g 
  • Xlarge eggs 2 (62g+- per egg)
  • Salt  1/4tsp
  • Cake flour 150g / plus 1-2 tbsp for coating
  • Baking powder  1/2tsp
  • Fresh milk 40-45ml
  • Vanilla extract 1/2tsp
  • Orange zest 1tsp optional
  •  
  • Pan size 21x6x8cm or 6in square 
  •  
  • Bake at 180°C / 350°F for 40-50 minutes 
  • Save left over fruit rum to brush on cake

Choux Au Craquelin Cream Puffs

 I have expiring heavy whipping cream so decided to bake some cream puffs. There are many recipes out there so which one to try? I saw this one on➡️ YouTube and decided to try it. The recipe is good and perfect for us. Any left over unfilled puffs, I just airfry them for about 5 mins at 380F the next day and fill with the left over cream. I did add 1 tbsp of sugar when whipping the cream since I didn't want it to be blant. I also needed to buy for 30 minutes instead of 20. Baking time definitely depends on your oven.

Christmas Dinner

 Merry Christmas! This year we went to our parents to celebrate Christmas together.  Since I need to go to my parents on Christmas eve I didn't have time to prepare anything other than panettone as gifts for families. I made 2 batches which made 9 panettone just enough to give to everyone. 

Here is our dinner. My mom is a great cook! Yum..yumm๐Ÿ˜‹

Kabocha-Japanese Pumkin Bread

My mom gave me a kabocha squash also known as Japanese pumkin to cook soup. My kids skin feel so dry especially during winter. I used most of the pumkin to cook soup with pork ribs and some to make bread. Never thought pumkin bread can be this delicious.  Even my daughter says she likes it. I didn't have the right pan but that didn't stop me from baking. The color is just so nice. Will definitely bake again when I buy this pumkin to make soup next time.

Siren Head Birthday Cake

 My little boy requested for a siren head birthday cake. Not sure why he likes this scary thing but he's very happy to see it. The siren head is made out of fondant and of course I made one not too scary...lol. All the other decorations are meringue cookies.

Ham Corn and Cheese Bread

 We have a lot of ham left from Thanksgiving so I've been baking ham corn and cheese buns for the past three days. These are just so delicious we're not tired of eating them yet. Today I also baked some hot dog buns too since kids loves hot dogs. Used the same dough for both.






Dough:

830 g bread flour

130 g sugar

3/4 tsp salt

2 large eggs

410 ml whole milk

3 tsp instant yeast 

113 g unsalted butter room temperature 

1. Place all dry ingredients into mixer bowl first then add in the milk and yeast last. 

2. Knead in mixer for 18-20 minutes on speed 2 and 4 until smooth and window panel.

3. Cover, rest dough for 1 to 1.5 hr until double.

4. Divide dough into 77g for ham corn cheese buns (10 buns). Divide 95g for hot dog buns (8 bun)


Ham Corn Cheese: 10 buns

About 1 cup chopped ham

About 1 cup yellow corn

4 Tbsp mayonnaise 

1/4 cup scallions (optional)

Divide dough into 10, about 77g each. Each dough then divide into 3 strands to braid. Proof for 30-40 minutes or until almost double. Use a sharp scissor to cut the center. Egg wash dough before placing fillings (mix all above ingredients together). Top with mozzarella cheese.

Bake in preheated oven 355F for 17-22 minutes and then broil for 1-2 minutes to get cheese golden.

* Egg wash (1 egg beaten with 1 tsp water). 

Hot Dog Buns: 8

8 hot dogs

Lightly pan fry hot dog with some oil for few minutes.  Remove to paper towel to wipe off oil and cool.

Divide dough into 8 about 95 grams each. Roll dough into an long strain and then wrap the hot dog. Proof for about 30 until double. 

Brush egg wash on dough and bake in preheated oven at 355F for 17-20 minutes until golden.

Soft and delicious! Next day just heat in microwave. Super delicious when hot ๐Ÿ”ฅ

Water Lily and Guppies

I planted lotus a few months ago but due to neglect, , the algae killed them. So when I went to Lowes and saw the water lily on clearance for $3, I bought one home. This time to prevent the growth of algae, I clean my old fish tank to grow it indoor during winter. Then when my kids saw the fish tank, they asked where's the fish? Hmm...so I went and bought just one female guppy. I bought the one that looks pregnant since it'll be surprising if we get fry, plus I have not grow fish for so long it's safe to just get one fish to try first.

Surprisingly,  just after two days the guppy gave birth to 11 frys.๐Ÿฅณ We were pretty excited! Now it's already a couple weeks and the frys are larger. However,  not sure what happened to two of the frys, maybe the mother ate them or they got sucked up into the pump.๐Ÿคท‍♀️ So far the fishes and water lily all growing happily in my small fish tank.
