Fruit Tarts with Cookie Crust

My last experiment with tart crust is the cookie crust. I am done with fruit tarts and now can move on to other bakes. Family likes the cookie crust since softer. But of course I will need to find a way to make a thinner crust on the base. Cookie crust is the closest crust to Wegmans fruit tart.๐Ÿ˜‹

Fruit Tarts with Puff Pastry

My brother was complaining why my fruit tarts so big. He want bite sizes so he can just pop them in his mouth without having to use fork and he likes the crust to be puff pastry. He's asking so much but that gives me ideas and so I used puff pastry sheets from freezer to save work.  Used diplomat cream with is custard fold in whipped cream.๐Ÿ˜‹









Using my two different size cutters to cut the first round then use a smaller cutter to cut the inner circle (not all the way) do not remove it. Bake at 400 F for about 15 minutes. Cool and cut the inner circle and press down. Then fill with cream and top with fruit. Glaze with apricot glaze.

Note* I stacked the 2 sheets of pastry for a taller pastry which ended uneven puffs. So best to make a little bigger and shorter circle.

Fruit Tart with Shortbread Crust

My family really like Wegmans fruit tarts. However, we can only buy once in a while as the tarts is quite pricey and 1 extra large tart is still not enough for everyone. Our family likes round 2 and 3 the next day and day after...lol. So I am searching for the perfect recipe...at least something similar to Wegmans.  The toughest part is the tart crust. Wegmans tart crust is different than any other places we ate. Their crust is more on soft and chewy compared to hard and crispy.  Today I tried the shortbread crust  and flavor is nice but still too hard and crispy for family. So next time will need to try a cookie crust. I also think baking small individual tarts is better as cutting can be messy.๐Ÿ˜„
