Fruit Tart with Shortbread Crust

My family really like Wegmans fruit tarts. However, we can only buy once in a while as the tarts is quite pricey and 1 extra large tart is still not enough for everyone. Our family likes round 2 and 3 the next day and day after...lol. So I am searching for the perfect recipe...at least something similar to Wegmans.  The toughest part is the tart crust. Wegmans tart crust is different than any other places we ate. Their crust is more on soft and chewy compared to hard and crispy.  Today I tried the shortbread crust  and flavor is nice but still too hard and crispy for family. So next time will need to try a cookie crust. I also think baking small individual tarts is better as cutting can be messy.😄
