Mix Nuts Mooncakes



I was hungry for mooncakes since I didn't get to eat any this Autumn Festival. The one at the market is too sweet so I decided to make my own. Not too hard to make but kinda tough to make the dough. This is my first batch and it tastes pretty good...except the skin was a bit hard after cooling. But after leaving it for a couple days, the skin got softer. :) I'll have to try out other recipes to get the right skin.

Hi ch3rri-blossoms - If you can read Vietnamese, go to a forum called Chot Nho, they have great Vietnamese mooncake recipes and picture-by-picture instructions. There was a thread about Mooncakes (in May 2009) also. I followed their recipes and my mooncakes came out pretty good at first try this month.

Thanks. I can read some viet..but I can ask my mom to translate. :) Which recipe did you use?

ch3rri - if you only care for how to make moondcake skin soft, then follow any recipes in that forum by PinkPanther, MiCan, or KitchenAid; because I tried them all at my first try, believe it or not? They all came out good. Since it was my first try making mooncake, I chose the mung bean filling ('cause it was cheap). Man, I had too much filing for 150gr molds, that was why I tried all skin recipes.....
